Muffins!

I had some leftover pantry junk that I whipped up into muffins. I also added some currants, just because.

Gluten Free Oatmeal Apple Muffins

1 1/2 cups Applesauce 1/3 cup melted butter (2/3 of a stick) 2 eggs 1/2 cup brown sugar 1 teaspoon vanilla Pinch of salt 1 1/2 cups quick oats 1/4 teaspoon xanthan gum 1 teaspoon baking soda 1/2 teaspoon baking powder 1 tablespoon ground cinnamon

Bake at 350º for 20 minutes. Makes about 12 very big or 13 normal size muffins.
